
This coleslaw is so easy and is great as a side dish for any Whole 30 compliant meat recipe. If you are feeling lazy and just want to make a plain grilled meat, you can eat this with it. I like to make a whole bunch of this and keep it in the fridge for when you need it (it will keep in the fridge and gets better every day)

Creamy Coleslaw Salad
Makes 20 servings
1 head of green cabbage, shredded with a knife or grater
1/4 head of red cabbage, shredded with a knife or grater
2 carrots, peeled and sliced thin
1 cup of unsweetened apple juice
1/2 cup of Primal Kitchen Avocado Mayo
2 tablespoons cider vinegar
1/4 cup salt
1 sprinkle of pepper
Put cabbages and carrots together in a bowl. In a separate bowl, combine juice, mayo, vinegar, salt and pepper. Taste to make sure there is good flavor and balance (Too bitter? Add Juice. Too sweet? Add Vinegar. Lacking flavor? Add salt.)
Mix dressing with cabbage. Cover and marinate at least two hours in the fridge. Enjoy!
