
Not enough people make lamb chops these days. They are so tasty when cooked properly and easy to prepare. Make sure you do not overcook them because then they are tough and the flavor becomes gamey and strong. They are a great pick-up-and-eat party food as well!

Tasty Grilled Lamb Chops
Serves 4 (2 chops per person)
1 8-chop lamb chop rack (as the butcher to split the rack into chops for you)
1/4 cup olive oil
3 sprigs fresh thyme
salt and pepper
1/2 cup Whole 30 all-purpose marinade
Brush the chops with olive oil and sprinkle with thyme leaves and add salt and pepper liberally. Heat grill to high and smoking. You can also use a cast iron pan or grill pan inside. Cook lamb chops about 5 minutes on each side. Medium rare is the best temperature. You can achieve this by getting a thermometer and placing into the center of one chop. It should come to 120-125 degrees. After it is taken off the grill let it sit and it will cook to the perfect doneness. If you don’t have a thermometer, feel the upper part of the piece of skin between your thumb and forefinger, the chop should feel that soft when you push down on it.
Brush each chop with the all-purpose marinade and serve immediately.
