Whole 30 Garlicky Shrimp Scampi

These shrimp are great on salad.

This shrimp recipe is so incredibly easy to make. Make sure to ask at the store if the shrimp came in frozen. If it did…buy it frozen. You do not want defrosted shrimp that has been sitting in the case all day. I love to pair this with a Thousand Island dressing-style dipping sauce, whether it is on the salad or just to dip.

Garlicky Shrimp Scampi

Serves 4

1 pound peeled shrimp with the tails left on

salt and pepper

1 tablespoon Extra Virgin Olive Oil

1 tablespoon Ghee (butter with the milk solids removed)

2 teaspoons chopped garlic

1/2 teaspoon dried parsley

1/2 teaspoon salt

Coat shrimp with salt and pepper all around. Heat a medium fry pan on high. Add oil and butter until butter is melted. Add shrimp and cook for 3 minutes until starting to brown and cook through. Add garlic and cook 2 minutes more or until there is an aroma of garlic. Toss in the dried parsley and salt. Heat dried herbs through and enjoy!

Serve with Whole 30 Thousand Island Dressing.
