
This chili is so good. It is what makes the Whole 30 more special than the average diet. You can use full fat ground meat instead of dry lean meat like turkey or chicken. Mix it up for best flavor, use beef, pork, lamb…anything you want.
Easy and Tasty Chili Con Carne
Serves 6 people a heaping bowl
1 pound ground beef (highest fat percentage available)
1 pound ground pork
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
2 cloves of garlic, chopped
1 jalapeno pepper, seeded and chopped
Chili Spice Mixture (3 tablespoons chili powder, 2 teaspoons cumin, 1 teaspoon oregano, 1 teaspoon salt, 1 teaspoon black ground pepper)
1 cup compliant apple juice (no sugar added)
1 14.5 ounce can chopped tomatoes (I like Muir Glen)
1/2 cup compliant tomato sauce (I like Muir Glen)
Heat a dutch oven or a large heavy pot with a lid on high. Add ground meat and cook about 10-15 minutes, until brown. Add onion, peppers, garlic and jalapeno pepper. Cook 5 minutes more. Add spice mixture and cook 2 minutes. Add apple juice, canned tomatoes (including juice) and tomato sauce. Cover and simmer on low for 1 1/2 hours, stirring occasionally. Enjoy!
For the slow cooker: Put the ground meat in a slow cooker along with the vegetables, spice mixture, apple juice, tomatoes and tomato sauce. Cook on low for 10-12 hours. Enjoy!
