
Serves 6
1 whole supermarket rotisserie chicken (make sure it has NO additives or preservatives~Whole Foods Plain Rotisserie is perfect)
1/2 cup chopped celery
1 cup red grapes, cut in half
1/4 cup raisins (no sugar added!)
1/2 cup pine nuts (for a special treat, toast them on a pan for 5 minutes)
Dressing:
1/2 cup Primal Kitchen Avocado Mayo
1/4 cup apple juice (no sugar added!)
1 tablespoon dijon mustard
1 teaspoon garlic powder
1/2 teaspoon turmeric powder
2 teaspoons salt
Pull all of the meat off of the rotisserie chicken and discard skins. Pull apart and shred the meat until it is in bite sized chunks. Add the celery, grapes, raisins and pine nuts. Mix together all ingredients for the dressing and add to chicken mixture. Enjoy!
