Whole 30 Lasagna

This dish is a little more complicated but so worth the effort. You can freeze this fully cooked and portioned and reheat as needed.
Casserole with chicken, eggplant, zucchini and tomatoes. Cooking process.
Layer the zucchini as if it were noodles.

Veggie “Noodle” Lasagna

Serves 12

3 cups Whole 30 Bolognese sauce

3 whole zucchini, thinly sliced lengthwise

2 cups Whole 30 “cheese” sauce

Preheat oven to 425 degrees. In a 13 x 9 inch casserole dish, spread bolognese sauce in a thin layer. Layer zucchini slices on top and spread “cheese” sauce on top and continue to layer in this order until you reach the top and the last layer is “cheese”. Bake 30-45 minutes until heated through and brown and bubbly on top. Serve and enjoy!
